Phytat (myo-inosit-hexaphosphat) heißt die Substanz in der äußeren Hülle des Korns, die beides kann. Sie liefert dem Korn Energie durch Abspaltung der angehängten energiereichen Phosphatmoleküle. Gleichzeitig bindet sie bei Aufnahme eine Reihe von Nährstoffen im Darm wie Eisen, Zink, Calcium oder Magnesium, die dann unverdaut ausgeschieden werden. Deshalb kann Körnerkost zu einem Mineralstoffmangel führen.
