Explanation:
shortening is indeed a type of cooking fat but it can only be found in American specialty stores if at all. (it is quite tasteless and is used for consistency only)

There is not real substitute in Germany that works the same way. When cooking I replace it with some sort of Schmalz or butter or margerine (NOT the lowfat kind) depending on which taste I will allow in the recipe.

Schmalz oder Rindertalg


Explanation:
Schmalz is the refined fat from pigs and Rindertalg is the refined fat from cows.
I know that in NZ whenever a recipe said shortening we used that of cattle.
