This seems to be about food processing.
A side of pork, for example, is made of 4 primary sections, called primals. Within each primal there are smaller, less tender sections, called sub-primals.
I think one could safely call primary sections or primals 'prime cuts', which is what you would say if you went to the local butcher.
In German a prime cut would be: ein Stück bester Qualität.
Primals and sub-primals could be translated as "(Güte)Klasse 1 and 2" or maybe even as "erstklassige und zweitklassige Stücke Fleisch.
