English term or phrase: good stayer

I am translating a horse racing game and this is how one of the horses is described:

Good stayer that can find the field too fast at times.

I actually have two problems here but I put in "good stayer" in the subject line because it seems to me as if this is a special horse racing term. I would guess that "good stayer" means that the horse is good at keeping up with the other horses but a) I am not sure whether I am right and b) is there are special term for this in German?

There other thing that puzzles me is "find the field too fast". Does this simply mean the horse starts too early (i.e. before the official start of the race) or is there some other meaning here that only horse racing experts would know about?
