(schnelles/hastiges) Durchblättern/Durchsuchen
Explanation:
Originally this Engl. expression referred to physical pages in a book only; in the above case, it relates to a computer device's "pages" in a metaphoric way (but this use is very common nowadays).

(You probably need to rephrase, e.g. "[Auf die Schnelle] das Adressverzeichnis zu durchsuchen ... / Wenn Sie im Adressbuch blättern ... ", etc.)

agree  Jana Uhlik: I would rewrite the sentence a bit, such as "in Ihrem Adressbuch nach Telefonnummern zu suchen, ..."

Durchsurfen

Explanation:
"Flipping through" gives me the impression that it may be done in a casual, almost aimless or bored way, not necessarily to search for a specific number.

"Durchsurfen" also means to look quickly and possibly aimlessly through digitally stored information.

neutral  LittleBalu: but you wouldn't say that in German when "flipping through" an address book - even if that is stored in your mobile phone // no, I'd probably say "durchsuchen" or simply "im Adressbuch schnell etwas suchen"

-> You would still call it "Durchblättern"?
