I think that "Jaws of life" is a trademark of Hurst (http://www.jawsoflife.com/Main/Content.aspx) describing a variety of hydraulic rescue tools. I don't think that there is an Hebrew name for the trademark, and since it is not a single tool, I would have left it as is (even transcribing it), or just call it כלי חילוץ הידראוליים
