Basically, trans fat is made when manufacturers add hydrogen to vegetable oil--a process called hydrogenation. Hydrogenation increases the shelf life and flavor stability of foods containing these fats.

A margarinok bár finomak, mesterségesen előállított termékek. A növényi olajok vegyi kezelése során képződnek az ún. transz-zsírsavak. Ebből a keményített zsírból készülnek a margarinok.
A Harvard egyetem kutatói már 1993-ban megjelentettek egy tanulmányt, amelyben kijelentették: a transz-zsírsavak rendszeres és nagy mennyiségű fogyasztása érelmeszesedést okoz. (A transz-zsírsav a természetben nem fordul elő, mesterségesen előállított ipari termék.)
