My instinct tells me it's "athair Cúchulainn" but my grammar tells me it's "athair Chúchulainn".

The reason for 'Cúchulainn' rather than 'Chúchulainn' after 'athair' is because it defines a relationship of belonging between the first noun ('athair') and a person ('Cúchulainn').
