ciao monica,
potrei essere più specifica con qualche dettaglio in più sul contesto.
però per ora ti parlo più da viaggiatrice che da traduttrice. secondo me in italia non si fa la differenza tra "cooking banana" e "dessert bananas" perché noi non le cuciniamo. in molti dei posti del mondo dove cucinano una varietà di banane, spesso queste vengono indicate come "platano".
quindi potresti tradurre "platano" per "cooking bananas" e lasciare "banana" per quelle che vengono mangiate come frutta o dessert.
ora mi è venuta anche fame... :)

Asker: purtroppo devo farla la distinzione perché non si tratta di descrizioni relative all'Italia ma ai paesi in cui queste banane vengono coltivate.

agree  Marie-Hélène Hayles: sì, sono d'accordo anch'io. Infatti anche in inglese sarebbe più normale contrastare "banana" con "plantain", non ho mai visto "dessert banana" o "cooking banana" tranne come una descrizione.

Explanation:
In italiano non ci sono banane da cuocere ne banane da dessert, ma semplicemente banane che si mangiano alla fine del pasto come frutta o quando si vuole ma non cotte di solito. Quindi si puo` eventualmente specificare che certe banane si usano specialmente per cuocere, le altre sono tutte da dessert. poi mai dire mai.
