E credo che sia sottinteso "with" o simili. Anche perché hai detto che il termine si trova all'interno di un menu, come voce autonoma. Poi, non è mio campo e non sono uno chef, e naturalmente, come dici tu, tutto è possibile. :-)
Explanation: semplifica al massimo, visto che non è indicato di che tipo di salsa si tratta (un roux, una riduzione, l'aggiunta di altri ingredienti...)
