A bit of a mouthful, ma e' il termine preciso. Poi, se non piace, si potrebbe anche pensare a "istruzione" "istruzione di lingua madre" eccetera.

io direi questo. Alle elementari, a meno che oggi non ci siano stati cambiamenti in questo senso, non c'è una materia che si chiama produzione inguistica/lettura e scrittura, etc. ma queste abilità in genere sono racchiuse nella materia "italiano/ilngua italiana".

literacy comprende quindi "lettura/comprensione del testo/scrittura" però come ripeto, io di primo acchito le racchiuderei in "(lingua) inglese" o altra, altrimenti se vuoi "distaccarle" sono parecchiucce.
