Non ne sono molto sicura. ma se come dici tu, viene usato per i pretzel, vuol dire che nell'impasto viene usato come agente lievitante il bicarbonato di soda, come anche nel famoso Soda Bread irlandese:

Il pane irlandese più famoso è il soda bread. E' entrato a far parte del repertorio gastronomico irlandese soltanto dall'Ottocento, con la diffusione del bicarbonato di soda e delle polveri lievitanti. Il migliore è fatto con la farina integrale (con aggiunta di un po' di avena), il buttermilk (latticello) o del latte inacidito, e un po' di bicarbonato di soda. E' un pane 'tortoso', con un retrogusto leggermente dolciastro: si sposa benissimo alle minestre ed è ideale per esser imburrato.

Choosing the Right Flour
Often when people try to make this bread away from home it tastes all wrong, nothing like the delicious stuff they ate while in Ireland. That is because Irish flour is different, made from wheat grown in a different soil and climate, it is low in gluten. Ideally you would be able to track down Irish flour (which you can, here, but at a price!), but in the real world the best substitute is unbleached white flour.
If you cannot get that, use all-purpose flour but do not use hard or bread flour. These flours are very high in gluten and simply will not work in breads that do not use yeast.
Milk, Sour Milk & Buttermilk
Similarly you need to be careful with the buttermilk you use - homogenised will not work too well. And it cannot be ordinary milk - the acid in buttermilk reacting with the alkaline bread soda causes the bread to rise. A good alternative is whole milk which has been allowed to go sour, in fact many Irish people use up sour milk by making bread. It is impossible to be exact about the amount of buttermilk needed, it will depend on the nature of the flour. In an emergency I have added a half teaspoon (¼ American teaspoon) of vinegar to fresh milk to make it acid - it does work, but is not perfect.
The reaction between the milk and the bread soda is the key to good soda bread and it starts as soon as the ingredients meet, so it is vital to get the bread into the oven fast. So, the very minimum of kneading, which is not really required at all, a light touch at all times and into a hot oven the minute the bread is shaped.

E’ ormai noto che tutti i prodotti industriali e quelli della attuale panificazione ne sono esenti essendo stati sostituiti nella loro preparazione/fermentazione dall’inadatto “lievito di birra”, generando la moria lenta ed inesorabile dell’insostituibile micete prima presente negli esseri umani che utilizzavano la fermentazione naturale del pane a base cerealicola. Il lievito del pane di grano (cereale), non quello di birra che proviene dalla fermentazione del luppolo che è al contrario un legume, viene preparato con la sola fermentazione per qualche giorno della farina integrale del grano.
Un cucchiaio di bevanda del pane in ½ bicchiere di acqua, tre volte al dì, terrà lontano i microrganismi patogeni.

Explanation:
purtroppo non ho link da postarti perché si tratta di una questione ancora abbastanza 'pionieristica' qui in Italia. Si riferisce a pani fatti in maniera da spostare il pH gastrointestinale verso il basico (o alcalino, ma usare questo termine potrebbe portare alla stessa confusione in cui è incappato Michele) invece che, come succede normalmente con la maggior parte dei pani, verso l'acido. E' un approccio naturale al trattamento delle malattie fungine.
