Ricetta per la preparazione di un maialino da latte. "Riempire le spugnole con i ritagli"? (del maiale tagliato a forma di cubo)? Grazie in anticipo per qualsiasi suggerimento

Season the sukling pig joint and roastbriefly from all sides.
Cover the meat with lard or olive oil + sunflower oil (half and half), add the carrot, celery, onion, garlic, allspice, black pepper, thyme and bay leaf. The meat needs to be covered completely.
Roast in the oven at 120 °C for one to one and half hours or a little more, depending on the size of the joint.
Cut the finished meat into a neat cube.
Fill the morels with the **cuttings** and roast them with the shallot.
Season the suckling pig saddle and grill for a few minutes.
Morel sauce:
Roast the morels in butter, add caraway,pepper, shallot, salt, a splash of white wine and strong veal stock and boil briefly.
In the end, add a little cream to soften the flavour.

Explanation:
A me sembra che faccia riferimento a quello che avanza dopo che hai talgiato il pezzo di carne in "a neat cube".

Tra l'altro, 120 gradi???
