Direi: L' associazione sarà ritenuta come un' attività coperta da assicurazione (o meglio, "oggetto di copertura assicurativa", se ho capito il contesto), secondo l' art. 3 par. 1 e come il datore di lavoro.
Thereof in questo caso sta a dire "di cui stiamo parlando" ma credo si possa saltare perchè, anche se la traduzione è di tipo tecnico, la traduzione italiana risulta chiarissima senza questo termine; risulterebbe invece ridondante se lo inserissimo. Ciao

non credo ci siano alternative. il "thereof" sarebbe "il suo" (datore di lavoro). Mancando più contesto, non ho idea il suo di chi sarebbe, forse è dell'associazione stessa, ma mi sembra un po' contorto.

ieri ho dimenticato di specificare che tradurrei "undertaking" come "impresa".
