English term or phrase: job changeover
In fact, it is with automation where the finishing dilemma occurs. We are quite rightly told that it is essential for the future of finishing. For one thing, finishers are being put under increasing pressure as the printing industry moves towards ever tighter deadlines, and shorter and shorter runs resulting in more job changeovers and hence the need to cut set-up times.

Explanation:
Hello
A "job changeover" is what happens when you stop (in your case) printing one run and then clean the machinery and repeat the setups to start with a new order. I would suggest "cambio commessa" to render this concept in Italian, although a more common expression is "cambio formato".
Cheers
Derek

Explanation:
probabilmente non ho capito la frase. Se si trattasse di cambiamento di mansioni del personale, si usa questo termine (almeno così dicevamo nell'azienda dove lavoravo).
