Il termine foil implica l'idea dello strato. Io trasporrei allora questo concetto nel verbo "sovrapporre" che indica la sostituzione (ciò che sovrappone copre) e quindi rispetta il verbo inglese, ma in più rende l'idea degli strati. Una roba del genere:

"Stiamo affrontando una nuova era, in cui al vecchio concetto cellulare-batteriologico che si basava sulla fisiologia e sulla biochimica si sovrappone un nuovo concetto ....."
