Explanation:
credo che significhi che su uno stesso scaffale c'è un po' di tutto, come spesso accade nei "market" del terzo mondo
non riesco a trovare referenze per dolee dye (forse una tintura o una salsa?)
l'altro una specie di yoghurt derivato dal caglio acido

Explanation:
Ho cercato sull'OED, ma non ho trovato niente per "dolee". Se stai traducendo "In the Permanent Way", "dolee dye" potrebbe riferirsi alla tintura rossa ("red dye") di cui si parla alla pagina precedente.
"Dolee" sembrerebbe una parola Hindi, forse potresti chiedere a qualche collega indiano qui su ProZ... io lascerei però la parola "dolee" così com'è: "tintura dolee".
"Sour curds" è una specie di yogurt

per dolee sembra un termine indiano che indica "muro" ma ci vorrebbe un indiano per essere sicuri

visto il contesto propenderei per caglio per curds
