Lavoro da anni con una ditta che produce proprio etichettatrici. Si chiama proprio bobina, intendendo il rotolo di carta adesiva o quant'altro che sta un supporto girevole e che viene fornita alla macchina per etichettare.
Nel link sotto, vedi rappresentate nella foto proprio due bobine.
In gergo tecnico si chiamano così, poi si può optare anche per rotolo, ma alle fiere, nei cataloghi, nelle offerte, con clienti e fornitori, io ho sempre sentito parlare di bobina.

A me sembra che label stock sia un termine più generico di bobina (roll) e intenda il materiale di supporto che poi si va a stampare, che poi può essere fornito sotto forma di bobina o meno.
