'But when we saw those pictures... we went ape shit.'
Il significato mi è chiaro e la traduzione che ho al momento è: 'non ci abbiamo più visto'. Mi piacerebbe però trovare altre espressioni, magari più idiomatiche, per esprimere lo stesso concetto.

According to the Urban dictionary there are two meanings: to go ape- shit is to go completely crazy, to give up on any logical way to solve a problem and resort to violence.

to get so angry that you lose control and start waving your arms around whilst screaming abuse, a violent attack on someone or something

According to the Oxford, when you "go ape" you start behaving crazily - 'ape shit' will just be stronger, hence my suggestions, starting from a simple 'impazzire',, which, however, in the context sounds really good to me
.... siamo impazziti!!!
or, as you said, 'non ci abbiamo visto più' - which I believe is quite idiomatic anyway
or a long series of synonims, such as
'abbiamo dato in escandescenze!!'
'abbiamo perso la bussola!'
abbiamo perso la testa
abbiamo dato i numeri
or even:
siamo andati in collera
siamo diventati neri

Silvia P.: l'espressione "dar di matto" è regionale, non la userei, meglio "abbiamo dato in escandescenze" e "siamo andati fuori dai gangheri" secondo me (scarterei le altre due opzioni)

I suppose my answer should be "ci ha fatto incazzare come belve" but it's one of those things you usually say or hear in the first person singular... (m'ha fatto..)
