"Wind up" significa, fra le altre cose, "eccitare".
"To a pitch" = al culmine, al massimo, ai massimi livelli, esageratamente, un casino, ecc.
Se ho capito bene il contesto, si tratta di due che stanno "pomiciando" in auto e si eccitano all'idea che arrivi un poliziotto e li becchi in flagrante come due ragazzini.
Attizzare/arripare sono un po' più "sportivi" come verbi, non so se il tuo testo li consente, e lo stesso dicasi per "di brutto/un casino"...
Insomma, la proposta è un po' mista, vedi se riesci a tirarne fuori qualcosa di utile :-)
