リーダーズによると「dehull」は「…の外皮[へた]をとる、…の皮[さや]をとる」とありますが、ここの場合は「さや」ではないと思います。枝豆(=大豆)の「さや」をご想像いただくと、これのことではないな、と。ここでは大豆を煮る時に取れてしまうことのある、あの薄い皮のことですよね。

上記のリンクに脱皮大豆の説明がありますので、それを読むと「さや」のことではないとお分かりいただけるかと。また、文脈からも「さや」ではないと思います。ちなみに、大豆の「さや」は枝豆(=大豆)のさやなので、みなさんおなじみだと思いますが。
