ここでいう、”feeder steers and heifers”を、大まかに”feeder stock”と解釈して、その後に括弧で囲んで具体名を書くと誤解がないんではないでしょうか。そうすれば、「雄牛（steers）が去勢雄牛）」「雌牛（steers）が未経産雌牛」のことだと理解してもらえるはずです。英語では雄牛と雌牛が「steers and heifers」と区別して書かれていますから、「雄牛と雌牛」とくっつけて書いてしまうと区別がつかなくなります。またジョンソンさんのおっしゃる「肉用和牛の去勢や雌の子牛」の「子牛」の部分は納得できますが、「去勢」が雄牛にかかっておりませんので、不適訳ではないでしょうか。

Explanation:
heifers are actually you female cattle which have not yet given birth （未経産と言います）、cows （母牛）, so these females will probably noy be used for breeding.

I assume these are all for slaughter and not for breeding since they will be needing replacment cattle for six years:-)
BTW, 去勢牛 grow larger and produce more meat, but the most expensive and beef with better marbling comes from 雌和牛 (since all female animals naturally carry more fat (sorry ladies..ha ha ) . Just a little information in case you are interested.
