my guess is the term is used to differentiate from those tomatoes ripen artificially, a practice so normal now in the farming industry of certain fruits. so by definition the phrase would be talking about 'buah tomato yang bukan masak secara buatan', wouldn't you say?
btw, i offered 'ranum' instead of 'masak' just in case this is a menu translation. in which case you might need 'masak' for cook. :)
