English term or phrase:artisanal scene
FAC1: You know something? You're nothing but a copycat.
FAC2: That's pretty tough talk for someone who has to go 100 miles to get his radicchio.
FAC1:What's that supposed to mean?
FAC2:All of our produce and proteins come from within 50 miles of New York. And you claim 100. Do the math. I'm gonna dominate the artisanal scene.
Obaj prowadzą restauracje nastawione na ekologiczne żywienie. FAC1 w zasadzie nie używa w swojej restauracji elektroniki, żeby być bardziej naturalnym. Domyslam sie, ze to "artisanal scene" chodzi o rodzaj klienteli , aleto tylko takie moje przypuszczenia.
"artisanal" oznacza produkty wytwarzane wg tradycyjnych receptur, oczywiście ręcznie, czyli właśnie ręcznie robione sery, wędliny, dżemy, ciasta, czekolada, ręcznie tłoczona oliwa, itp. itd. z lokalanych składników, tak jak to się dawniej robiło, "jak u babci" ;)

W Wielkiej Brytanii artisan food albo artisan food products to jest zwykle takie jedzenie organiczne, ręcznie robione, czasem nietypowe mocno, oczywiście droższe niż inne. W Polse też są czasem takie "bazary" jakiejś żywności organicznej czy z innych agroturystycznych miejsc. Zasadniczo jest to takie "domowe" jedzenie, tylko droższe ;)
