Czy to ma fachową nazwę?
To obtain a good crack in your baguette:
• Allow baguettes to dry slightly before cutting them.
• When cutting a baguette, try to cut as much as possible underneath the surface of the dough. If you cut too vertically, the crack will not develop as it should.
• Bake the baguettes as soon as possible after cutting. This will ensure a better crack in the oven.
• Use the right amount of steam. Too much steam will result in a bad looking crack. Too little steam will give a wild crack that will damage the baguette across its full length.
