BROWN MUSHROOMS - also called Brown Cap, Chestnut, Champignon Marron and Portabello mushrooms are the most popular exotic mushroom. They are sold in two sizes. The smaller ones are called Brown Cap, Chestnut, Crimini, Portabellini. The larger ones, with the gills showing underneath, are called Flat Chestnut or Portabello. The Flat Chestnut mushrooms, are 50-70mm (2-3"). Portabello mushrooms are grown to 200mm. more nutty flavour. In America, the large portabellos are used to hold the whole meal, rather like a pizza base for pizzas.
