He is sorting out crabs and keeping them in the water circulating through a series of fiberglass tanks until they molt into soft shells. “That’s where we get our most money, that soft shell.” He explains that most of the biggest male crabs, six inches or so, go into the “basket trade”—crabs sold whole for stores and restaurants. Smaller crabs and the female crabs go to the “picking trade” and become, among other things, the famous Maryland crab cakes bought by Mary Ann. He talks about the economics of crabbing. There are wages for the mate, the person who goes out with you, and fuel costs, plus maintaining the boat. Then there are the buyer’s costs, processing, refrigeration, and transport: “When you add it all together, then what you’re paying for a pound of crab meat doesn’t sound quite as bad.”
