żółknięcie Explanation: Mięso młodych zwierząt jest jaśniejsze i delikatniejsze od mięsa starszych sztuk.Z wiekiem zwierząt tłuszcz ciemnieje i żółknie. Mięso poprzerastane tłuszczem , "marmurkowe",pozostaje dłużej soczyste i jest smaczniejsze od całkiem chudego. Suche , matowe miejsca przekrojenia świadczą o tym ,że soki pozostaną w nim również podczas pieczenia , czyli że będzie się ono rzeczywiście piekło , a nie dusiło.Takie mięso nie będzie twarde.
