neutral  Paul Dixon: apenas um seria "but one", sem o "all". Com "deixe" até que fica correto, mas não é a tradução exata de "all but one".

  -> A ideia é usar com o "deixe" mesmo. Realmente não é tão exata. Coloquei mais para apresentar uma outra opção com uma construção diferente. Às vezes isso ajuda a termos uma ideia diferente que seja tanto adequada quanto mais natural na língua de chegada.
