Em termos de botânica, seria bem correto "ramo de rebento de brócoli". Porém acho que para uma receita no Brasil o ingrediente poderá ser identificado mais facilmente sendo denominado um "ramo de talos e folhas de brócoli".

Cuidado, não use a palavra "grelo" de brócoli. Seria correta, mas no Brasil muitas pessoas chamam o clitóris de "grelo".

P.S.: pratos com talo e folhas de brócoli, preparados certinho, são uma delícia, eu adoro.
