Explanation:
Geralmente, core temperature se refere à temperatura do núcleo do produto.
Os alimentos, ao serem refrigerados ou congelados, apresentam diferentes graus (um gradiente) de temperatura na direção da superfície ao núcleo.
Assim, geralmente se faz controle da eficiência do equipamento de acordo com o tempo para baixar a temperatura do núcleo ao ponto desejado.
