“Mau-sabor” é uma designação brasileira que corresponde na língua inglesa a off-flavor – termo usado internacionalmente para designar qualquer sabor anormal desagradável em alimentos e líquidos. O pescado pode ser afetado por vários tipos de off-flavor. Porém, o tipo de off-flavor responsável pela grande maioria dos casos em pescado e em água potável no mundo é o que conhecemos por “gosto de barro”. É causado pela presença de apenas duas substâncias químicas naturais – geosmina (GEO) e 2-metil-isoborneol (MIB), que podem ocorrer juntas ou isoladas. O odor destas substâncias lembra o cheiro de solo molhado ou de ambiente mofado. Nesse artigo são apresentadas algumas conjecturas e atualidades sobre o esse tão importante assunto.
