"Take the edge of something" é diminuir. Assim, e considerando as informações sobre o gado e a alta do açúcar, não seria algo como "as altas do açúcar tiram a vantagem dos bois/gado"? Pois estando o açúcar em alta, é mais lucrativo plantar cana do que criar gado.

Grata pelo elogio! Já que faz sentido, então uma tradução possível seria algo como "açúcar deixa o gado com a desvantagem" ou, sendo mais informal, "açúcar deixa os touros na pior". :) Só tentando ajudar mais... :)
