e o metoda primitiva de conservare :
de fapt primul pas in prepararea pastramei ( care nu e nici slanina si nici soric )
se da carnea la sare intr-o covata afara si se lasa pana absoarbe sarea
dupa care se usuca la vant sau la fum :)

salt pork
The layer of fat (usually with some streaks of lean) that is cut from the pig's belly and sides. Salt pork is so named because it is salt-cured. Salt pork is often confused with fatback, which is unsalted. Salt pork varies in degree of saltiness and often must be blanched to remove the excess salt before use. It is similar to bacon, but much fattier and unsmoked.

slanina sarata


Explanation:
sau sunculita sarata ( ca aceea care se prepara de Craciun in casele romanesti) . Nu are doar grasime dar si putina carne.
Eu o folosesc pentru spaghetti alla carbonara- este aproape la fel ca "pancetta" - ingedient indispensabil pt carbonara.
Pancetta ar fi " bacon" aici, dar nu este la fel ca "salted pork"
