Проблема как раз в этих классах... В англоязчных источниках dormancy class встречается неоднократно, а вот русский эквивалент мне пока найти не удалось.

In South Africa the NLEP trials have shown that the most suitable range for all our climatic conditions is from 5 to 9, as follows:
5 – semi-dormant
6 & 7 – intermediate dormancy
8 – non-dormant
9 – very non-dormant.
The more winter dormant a variety, the longer its lifespan and the better adapted it is
to grazing.
