Мне кажется, что по отношению к мотоциклам термин stripped back означает "облегченный" или "облегченная модель", то есть когда с мотоцикла сняты все прибомбасы и оставлено лишь самое необходимое. Вполне вероятно, что есть какой-то более разговорный русский термин, но его могут знать только байкеры.
