Кажется прояснилось: Eye Fillet это то же, что tenderloin; а tenderloin переводится как "филейная вырезка" (или просто "вырезка"):

EYE FILLET
This is one of the least worked, most tender and most expensive muscles. Also known as the tenderloin, it runs on the inside of the carcass on the inside of the T-bone. It has fine texture but less robust flavour. Perfect for carpaccio or as confit in olive oil at just above 50C. Rapid-roast whole and serve rare and rested.
