Explanation:
Как то не могу найти полностью соответствующий перевод этого слова. Но имеется в виду твердость или упругость (что о пище обычно не говорится) продукта. Знаете, когда варите макароны, их можно переварить и будут они совсем мягкими. А если варить меньше, они слегка твердоватые но как раз в точку - это и есть bite.

Thanks for your version, which seems to be more appropriate as the term quite often refers not only to spicy product but to all kind of bakery. Although, I still can not find an appropriate Russian word to express this quality in gastronomic terms.

Explanation:
In this context, "bite" refers to the product spiciness, or distinct nuances of taste, not to how easy or hard it is to bite.

I would suggest "ostrotA", except in Russian we usually talk of something being more "ostryj" or less "ostryj", and not distinct spicy tastes.
