В тексте есть даже прямое указание на смысл этого выражения (= average volume), но есть подозрение, что специалисты в этой области могут использовать какое-нибудь особое слово или выражение.

мне кажется, здесь под stoutness понимается именно "полнота" или "тучность" бревна, т.е. его объем. Этот параметр легко измеряется. А вот для измерения прочности бревно надо ломать...
Насчет медианы. Вообще говоря, медиана не равна среднему значению, это типа значение "среднего" экземпляра в выборке. Так что для осторожности можно оставить медианный.
С другой стороны, они явно указывают, что это средний объем...
м.б, можно и средний написать - но лучше указать его в скобках, как в оригинале.
