Это выражение пришло на смену "limousine liberals", пошло от итальянского latte -- молоко или сливки, добавляемые в кофе. Я бы предложил "сливочные либералы", "либералы в членовозах" или, ближе к современному сленгу, "либералы на понтах", "понтовые либералы".

С NASCAR Dads сложнее:

The term NASCAR Dad was coined last year by Celinda Lake, a Democratic pollster, and it describes rural and small-town voters, especially white men in the South, who once were solid Democrats but who've been voting Republican in presidential elections as the parties split over social issues such as race, gays and guns.

Простые дядьки, кот. прутся от гонок (в том числе предвыборных), бейсбола, футбола, баскета, а остальное мало волнует -- все остальное, кроме, само собой налогов и шкурных интересов. Вот и перебросились от демократов к республиканцам.

Рискую предложить "гонимые/галимые папашки" или "техасские дядьки" (не хочу ничем обидеть Техас, но как-то олицетворение Юга Штатов).

  -> да не перед кем, на самом деле. Это, похоже, очень особые реалии американской политики, кот. у нас не переводятся и тут никого не волнуют. :)

Насчет NASCAR dads - согласен с Кириллом. Но перевод должен все же наши реалии отражать, а у нас от гонок, что НАСКАР, что Формула-1 не так "прутся": лучше, например, "дядьки у пивного ларька" или что-то в этом роде
