Es útil para detectar adulteraciones.
La leche de vaca tiene 40 ácidos grasos.
El análisis se realiza, por ejemplo, mediante una columna capilar CP-FFAP-CB tipo WCOT usando Helio como carrier y un detector FID.
Es posible identificar la especie en cuestión por lo que se llama "fingerprinting" o también "signature".
