just as I answered first, but then with more context....one doesnt scrub food with scrub pads...with a brush i can understand, and then let dry overnight ? Strange baking!!

According to the context, it could just as well be a baked base (food) for another preparation, as the trays for baking inside the oven.
Maybe you have to check with the client.

a restaurant or bakey, o pastelaria, you ahve lots of these trays going inside the oven, in and out, baking all morning, you know, you have to clean them and prepare them before you put new stuff to be baked, etc.
