English term or phrase: whole grain vs. whole wheat
The US English text explains the difference between "whole wheat" flour, which can be highly refined white flour and have brown dye and bran added afterwards to make it seem more healthy, and "whole grain" flour, which is ground from the entire wheat (or other cereal) grain, including all its fiber as well as the germ. As far as I know, we'd call both things "harina integral", but being able to make the distinction would be really useful, otherwise I'll have to resort to an explanation.

The target audience for this is Latin America and the Spanish-speaking population of the US.

en realidad lo de integral cuando es refinada y con fibra añadida es un fraude, no es realmente integral.... de ahí incorporar "auténtica", que ya indica que hay otras que no lo son....

Explanation:
en realidad lo de integral cuando es refinada y con fibra añadida es un fraude, no es realmente integral.... de ahí incorporar "auténtica", que ya indica que hay otras que no lo son....

Harina integral v harina de Graham


Explanation:
Just came across this explanation, hope it helps!

Harina de trigo integral: es una harina oscura que se obtiene de la molienda del grano de trigo con todas sus envolturas celulósicas. Según el grado de molienda se admiten 3 tipos: grueso, mediano y fino. Esta harina puede utilizarse sola.

Harina de Graham: es una harina integral con un porcentaje más alto de salvado. Sylvester Graham fue un nutricionista americano que luchó a principios del siglo XIX por una alimentación más natural donde el salvado debía ser incluido en los amasados de pan.

Un verdadero producto integral debe tener como primer ingrediente: harina integral o harina de trigo entero.
La harina integral (verdadera) lleva el grano molido, la de grano entero tiene trozos de grano no completamente molido.

El pan integral es más nutritivo que el blanco y constituye una opción completa para cada día. Su consumo es recomendado a los diabéticos, a quienes sufren problemas de estreñimiento o aquellas otras personas que siguen dietas de adelgazamiento. Lo que pocos saben es que algunos panes integrales que se venden en tiendas, bodegas y panaderías --ya sea en moldes o por unidad-- no son tan integrales que digamos.

Harina integral vs. harina refinada


Explanation:
There are many breads sold in the US that are labeled as 100% Whole Wheat Bread, and have the 100% Whole Grains stamp of the Whole Grains Council, which seems to be the main authority on the matter.

The 100% stamp means that a food contains a full serving or more of whole grains in each serving and that every grain in that serving is a whole grain. There is also a Basic stamp on many breads, which means that a food contains half a serving of whole grains per labeled serving.

To decide which bread is really a whole-grain bread, the Council recommends reading the ingredients and look for words such as whole wheat, whole grains, wheatberries, oats or brown rice, among the first ingredients of the bread.

That being said, if you speak of "stuff" added to the wheat flour to make it look healthier, it should be "harina refinada", since the real whole wheat bread will have the whole grains, just as the bread labeled as "whole grain bread" do.
