According to my research, the tabling method is as follows: "Pastry chefs use a method called "tabling" to temper chocolate, a cooling-and-agitating method that involves pouring two-thirds of the melted chocolate onto a marble slab."
According to the web page Los Secretos del Chocolate, the method is called templar a mano or "Tabliering." : "Vierta 2/3 del chocolate derretido sobre una tabla fría o superficie de mármol."

templado sobre mármol


Explanation:
El método es exactamente el que Rachel ha descrito. Sin embargo, tengo la impresión de que "templado sobre mármol" es una expresión más extendida. Te adjunto dos referencias, una de un libro de cocina y otra de un maestro chocolatero argentino. Saludos cordiales.
