Sutffing of sausage es el relleno de las sanchicas pero ¿a qué se refiere con "dumping making"? No lo encuentro en ningún lado.

El término "dumping making" , si lo tradujéramos literalmente sería " hacer masa". En español no es necesario añadir el verbo "hacer" en este caso, ya que tenemos una verbalización del sustantivo "masa". i.e, "amasar".
la traducción quedaría, más o menos, así:
"...prepara rellenos para salchichas, amasa..."

Explanation:
Si se refiere, como supongo, a cortar o formar los pedacitos de masa, en castellano usaríamos esos términos. Los "dumpling" son bolitas (no bolas) que en general se agregan a un guiso o sopa.
"Ñoqui" es más familiar. Si bien la academia los define con la receta aproximada de los de papa (en realidad no llevan mantequilla y pueden no llevar huevo), también los hay de pasta.
