I am translating a book about how to start your own business selling food at festivals. Need help with the term: cold holding. "The cold holding of potentially hazardous food must be below 41° F. For instance, if you are going to serve sour cream or cheese, it must be stored in an ice chest at or below 41° F. " The translation will be from English (American) to Spanish (Latin America).
