If this were an official hospital doc, then we would be looking at varón or hembra, if it's more informal, then niño or niña (and the observation that unless pushed, in Spain, we just refer to "bebé" is correct).

For other countries, I cannot speak, although I would observe that in Spain we do not use the term "beba", nor "bebé hombre o mujer"
