Explanation: En España, Centro y Sudamérica se utiliza la expresióm "segunda balanza" para referirse a el peso que queda del animal luego de sacar las patas, la cabeza, el cuero, la cola y las vísceras incluyendo corazón y pulmones.
Es el peso más importante antes del desose y es utilizado en una paramétrica para pagar al productor.
