English term or phrase: temperature lag
This approach has been modified by Videv (1972) and applied by Akterian
(1995) to a range of canned and bottled foods heating by convection. Their
approach uses the concept of thermal inertia E for the term mcp/UA. This
characterizes the temperature lag between the liquid temperature and the heating
medium.
