Curves that are concave upwards
are due to organisms of different heat resistance (see Section 3.1.5.2). The true
rate of inactivation can be obtained from the latter part of the curve where the
most heat resistance is located. A review of the different types of curve, including
shoulder, sigmoidal, upward concave and biphasic types, has been presented by
Cerf (1977). One of the commonest types of curve encountered shows an initial
shoulder, considered to be due to activation of organisms, followed by a constant
period of inactivation, and then a residual tailing.
